“POLITIKO”! No no, it has nothing to do with politics. The word “Polis” in Greek means “City”, as in Indianapolis, Metropolis, Acropolis, etc. As in NYC and London for short we refer to them as the “City”, so do Greeks refer to Constantinople for short. So anything that comes from there we call it “POLITIKO”!
The pictures here show the stages of preparation.
We start with slices of red ripe tomatoes and green peppers(sweet or mildly zesty), add crumbled barrel-aged feta cheese which can take some of the heat off the peppers if you like them hot like I do, drizzle some aromatic Greek extra virgin olive oil, top this with thin slices of bastourma which is a type of middle eastern cured meat and cover everything with a mix of four different cheeses!(kefalotyri, kasseri, fontina, Asiago)
Finally bake or broil until cheeses melt an enjoy with crispy toasted Greek pita and a glass or two of the wine of the ancients, namely retsina! Mmmm….enjoy it! Right here at Greek Islands!

On the table notice the Greek Extra Virgin Olive Oil, fresh lemon and herb dressing on the side and a portion of dandelion greens to compliment it!
